Oat Bran Muffins with Apple


    1 cup Energy Fields Oat Bran
    1/2 cup dried fruit medley
    1/3 cup brown sugar, firmly packed
    1/4 cup light olive oil
    3/4 cup wholemeal self-raising flour
    3/4 cup white self-raising flour
    1 egg, lightly beaten
    2 medium apples, grated
    1 tsp cinnamon
    1 cup skim milk
    olive oil spray


Preheat oven to 180°C.

Spray muffin tins lightly with oil spray.

Combine oat bran, dried fruit and milk in a bowl and let stand for 15 minutes.

Combine sugar, oil, egg, apples and cinnamon in separate bowl, stir in oat bran mixture and sifted flours.

Stir with a fork until just combined. Do not over mix.

Spoon into muffin tins and bake for 30 to 35 minutes or until muffins are firm to touch and golden brown.

Notes: Makes 12 oat bran muffins.

Oat Bran Muffins with Banana and Pecan


    3/4 cup wholemeal self-raising flour
    1 cup self-raising flour
    1/2 tsp mixed spice
    1/2 cup Energy Fields Oat Bran
    2 tbsp brown sugar
    1/2 cup chopped pecans
    1 cup mashed banana (about 3 medium-large bananas)
    1/4 cup light vegetable oil
    2 eggs, lightly beaten
    80ml low-fat milk
    40ml (2 tbsp) honey
    35g rolled oats


Preheat the oven to 180C.

Grease a 12-hole muffin tin.

In a large mixing bowl, sift together the flours and mixed spice.

Stir in the oat bran, sugar and pecans.

In a separate bowl, combine the banana, oil, eggs, milk and honey. Make a well in the centre of the dry ingredients and add the banana mixture, stirring until just combined.

Spoon the mixture into the prepared tin then sprinkle over the rolled oats. Bake for 20 minutes, or until a skewer inserted into the muffins comes out clean. Leave to cool in the tin for 10 minutes before turning out on to a wire rack.

These oat bran muffins can be made with chopped walnuts or almonds if you prefer.

Oat Bran Bread


    14g active dry yeast
    1065ml warm water divided
    180ml vegetable oil
    150g sugar
    60ml molasses
    10g salt
    30g wheat germ
    25g Energy Fields Oat Bran
    160g quick-cooking oats
    360g wholemeal flour
    875g all-purpose flour


In a large mixing bowl, dissolve yeast in 1/2 cup warm water.
Add oil, sugar, molasses, salt, wheat germ, oat bran and remaining warm water and mix well.
Add oats, wholemeal flour and 2 cups all-purpose flour and beat until smooth.
Add enough remaining all-purpose flour to form a soft dough.
Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes.
Place in a greased bowl, turning once to grease top.
Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down and shape into four loaves.
Place in a greased loaf pans.
Cover and let rise until doubled, about 30 minutes.
Bake at 180C for 30-35 minutes.
Remove from pans and cool on wire racks.

This oat bran recipes makes 4 oat bran bread loaves.

Breakfast Oat Bran Bread


    2 cups Energy Fields Oat Bran
    1/4 cup wheat Germ
    1/4 cup Energy Fields Linseed ground
    1/4 cup firmly packed brown sugar
    2 tsp baking powder
    1/2 tsp salt
    1 cup skim milk
    2 egg whites slightly beaten
    1/4 cup honey
    2 tbsp vegetable oil
    1 tsp cinnamon
    1 ripe banana, mashed
    ½ - 1 cup blueberries
    ½ - 1 cup walnuts


Preheat oven to 200C.

Combine dry ingredients.

Add milk, egg whites, honey, oil and banana and mix just until dry ingredients are moistened.

Mix in blueberries, and walnuts.

Spray flat, square baking dish with vegetable oil cooking spray. Do not use a loaf pan.

Place foil around the edges of the baking dish or edges will burn.

Bake for 30-35 minutes.

These oat bran recipes are great as a meal for breakfast, and will keep you going until lunchtime, or they can be made into oat bran muffins.

Oat Bran Cookies


    2/3 cup butter
    2/3 cup sugar
    1/2 cup brown sugar
    2 egg whites
    1 tsp vanilla
    3/4 cup flour
    1 1/2 cup Energy Fields Oat Bran
    1/4 tsp nutmeg
    1 tsp cinnamon
    1 cup raisins


Preheat oven to 180C.

Cream butter, egg whites and vanilla.

Blend dry ingredients.

Mix in raisins and add creamed mixture.

Spray cookie sheet with light oil spray.

Drop by spoonful and flatten with glass dipped in sugar.

Bake for 11-13 minutes. Cool before removing from sheet.

These oat bran cookies contain 5g of fibre per cookie, and are low fat and low calorie.
